Zucchini Wands


Zucchini Wands

Low Carb!... YES!
These zucchini wands are fast, easy, filling and incredibly satisfying.
Use smaller size zucchini that will cook faster.

A simple, easy side dish.  


  • Cut zucchini in half lengthwise.
  • Turn each half cut side down and with a paring tool, flatten the bottom lengthwise to keep zucchini from rolling.
  • Brush cut side of zucchini lightly with olive oil and rub with garlic.
  • Cut cherry tomatoes in half and arrange on top.
  • Sprinkle with salt and pepper and freshly grated parmesan cheese, (can use mozzarella or a mixture also).

Place on a baking sheet and bake in a preheated 375 degree oven for 20-30 minutes.

Broil under high heat for a minute or two if needed until parmesan is lightly browned.
Remove from sheet and lightly sprinkle with chopped Italian parsley and more salt of needed.
